It has dark green leaves with white edges and produces small flowers in late spring or early summer which are followed by round， edible tubers (the source of the starchy food). The roots can reach over one metre in length and two centimetres wide. They are covered with light-coloured furrows when fresh but become smooth and shiny as they age. [1]
This herb was once very popular for use in cooking， especially in Britain， where it became associated with stews and other rich dishes from the middle ages until the end of the nineteenth century. [2] However， since the second world war there has been an increasing trend towards using mechanized farming techniques and chemical fertilizers， so the availability of this plant for home use has become quite limited。 In addition， it's not easy to tell whether you're buying authentic Chinese yam or a replica. 编辑本段药用价值 【药典内容】 来源：本品为薯蓣科植物薯蓣的干燥根茎。全年均可采摘，除去杂质，晒干或烘干。 性状：本品呈类圆锥形，顶部钝圆或略有凹陷，底部略平，有的具短柄。表面黄白色，有纵皱纹及须根痕。顶端有残茎，可见凹窝。质坚实，断面白色至浅棕色，纤维性。气微，味淡、微甜。 鉴别： （1）取本品粉末0.2g，加甲醇10ml，超声处理10分钟，滤过，滤液蒸干，残渣加70％乙醇溶解，作为供试品溶液。分别吸取供试品溶液和对照品溶液各10ul，点于同一以氨基黑染色的硅胶G薄层板上，通风干箱中干燥，置紫外灯下检视，供试品色谱中在与对照品色谱相应的位置上，显相同颜色的荧光斑点。 （2）取本品粉末0.2g，用乙醚加热提取一次，取乙醚液蒸干，加无水乙醇溶解，作为供试品溶液。另取山药苷对照品，用无水乙醇制成每1ml含1mg的溶液，作为对照品溶液。照薄层色谱法（附录Ⅵ B）试验。吸取上述两种溶液各2μl，分别点于同一硅胶 G薄层板上，以苯－丙酮（17：3）为展开剂，展开，取出，晾干，喷以10％硫酸乙醇溶液，在105℃烘烤约5分钟，至斑点清晰，测量斑点的面积并计算含量。 本品按干燥品计算，含多糖以葡萄糖计，不得少于7.0％。 检查：酸不溶性灰分应符合规定。
